Smoking is a preservation technique kept alive by Le Fumoir d’Antan in the Magdalen Islands. After brining, the fish is exposed to the effects of the smoke produced by the burning of hard wood and sawdust.
The fish is suspended for a period of two to three months in the chamber of the smokehouse to acquire its distinctive taste and color.

- Hot or cold-smoked products must be delivered frozen by air (Pascan Aviation) or refrigerated truck (CTMA). You must pick up the merchandise at designated locations.
