Ingredients
- Mini nan or pita bread
- 1 red onion, thinly sliced
- 2 tbsp (30 ml) red wine
- 1 large tomato, cut into thin slices
- 1 tbsp (15 ml) olive oil
- Fresh basil, chopped
- 1 tbsp (15 ml) brown sugar
- 1 tsp (5ml) of butter
- 1 Cajun smoked mackerel fillet (20 g), thinly sliced
- 1 packet of granted Art’Seneau cheddar cheese (20 g)
- Salt and pepper
Instructions
- In a pan, brown the onion in butter
- Add the brown sugar and cook for 1 to 2 minutes until caramelized
- Add the wine, reduce until a syrupy consistency is obtained
- Spread a little onion confit on the nan bread
- Add the tomato slices, mackerel, a drille of olive oil, basil and cheese
- Salt and pepper
- Bke 8 to 10 minutes at 350°F (180°C)
