Mini smoked mackerel pizza with Cajun spices


  • Mini nan or pita bread
  • 1 red onion, thinly sliced
  • 2 tbsp (30 ml) red wine
  • 1 large tomato, cut into thin slices
  • 1 tbsp (15 ml) olive oil
  • Fresh basil, chopped
  • 1 tbsp (15 ml) brown sugar
  • 1 tsp (5ml) of butter
  • 1 Cajun smoked mackerel fillet (20 g), thinly sliced
  • 1 packet of granted Art’Seneau cheddar cheese (20 g)
  • Salt and pepper


  1. In a pan, brown the onion in butter
  2. Add the brown sugar and cook for 1 to 2 minutes until caramelized
  3. Add the wine, reduce until a syrupy consistency is obtained
  4. Spread a little onion confit on the nan bread
  5. Add the tomato slices, mackerel, a drille of olive oil, basil and cheese
  6. Salt and pepper
  7. Bke 8 to 10 minutes at 350°F (180°C)
