Smoked mussel soup

A bowl of smoked mussel soup

Ingredients

  • 2 medium red potatoes, cut into small cubes
  • 1 large carrot, diced
  • 2 stalks of celery, diced
  • 1 red onion, diced
  • 1 half-jar of drained marinated smoked mussels (120 g)
  • ½ packet of hot smoked salmon bites in maple syrup
  • 2 cups (500 ml) of water
  • ¾ cup (190 ml) 15% cooking cream
  • ½ tsp (3 ml) of curry powder
  • ½ packet of hot smoked salmon bites in maple syrup
  • Fresh basil
  • Salt and pepper
  • A little olive oil

Instructions

  1. Cook the potatoes in water until half cooked
  2. Drain and reserve
  3. Sweat the carrots, celery and onion in olive oil for 4 to 5 minutes
  4. Add the mussels, salmon bites, water, cream and curry powder
  5. Stir lightly
  6. Salt and pepper
  7. Cook over low heat for ten minutes
  8. Add basil
