Smoked scallop crostini

An excellent tapa for all occasions that presents the excellent flavor of our scallop in combination with an easy confit.

  • French baguette
  • 1 store-bought or homemade onion confit (below)
  • 1 package of smoked scallops (200 g)
  • 1 piece of grated Tomme des Demoiselles


  1. Cut the baguette lengthwise
  2. Make your onion confit or buy a store-bought one, and place it on top of the baguette.
  3. Place the scallops on top
  4. Put the cheese on top
  5. Brown in the oven for about 2 minutes

To make your onion confit

  • 1 tbsp of butter
  • 1 red onion, thinly sliced
  • 2 tbsp brown sugar
  • 5 tbsp red wine

Instructions for preparing the confit

  1. Cut the red onion into thin slices
  2. Sweat with the butter in a pan until the onion is translucent
  3. Add the brown sugar and cook for one to two minutes until caramelized
  4. Then add the red wine, reduce to a syrupy consistency
